Callington Mill Distillery

Callington Mill Distillery, located in the historic sandstone village of Oatlands, is one of Tasmania’s most impressive whisky destinations. Known as the “Rolls Royce” of distilleries, it offers visitors a truly immersive experience that combines heritage, fine dining, and world-class single malt whisky. Open daily from 10 am to 4 pm, the distillery welcomes guests to explore its modern facilities while celebrating the rich history of the site.
The distillery’s restaurant, also serving as its cellar door, showcases the best of Tasmanian produce, from fresh seafood and locally sourced meats to vegetarian and gluten-free options. Charcuterie and cheese plates are also available, making it the perfect spot to pair local food with premium whiskies.
For whisky enthusiasts, the Serendipity Experience is a highlight. Guests can taste five premium cask strength whiskies and, guided by a tasting expert, craft their own unique single malt. The experience includes a self-guided tour and the option to take home a personalised 700ml bottle, signed and labelled by you.
Additional tastings and self-guided tours are also available, offering four 15ml samples of Callington Mill’s finest whiskies.
The surrounding heritage precinct adds further depth to a visit. Once home to an illegal distillery in 1837, the site included a six-storey Lincolnshire tower mill, barns, and the miller’s hut. Restored in 2010, the mill is now the only fully operational flour mill of its kind in the southern hemisphere. Today, this historic setting has been transformed into Tasmania’s largest whisky distillery, blending the traditions of the past with the innovation of modern whisky making.
