Harvesting is done with care, with nuts collected only once they have fallen naturally from the trees, then carefully washed, sorted and dried. Coaldale is also Australia’s largest producer of pickled walnuts, a delicacy made by harvesting green walnuts in summer and pickling them whole in Tasmanian apple cider vinegar, sugar and spices. These unique treats pair perfectly with cheese, cold meats, or hearty meals and have earned multiple gold medals at national food awards.
