Nonesuch Distillery is where bold flavours and small-batch spirit meet in the rolling countryside just outside Hobart. Known for doing things a little differently, the team thrives on experimenting, refining, and getting those unique flavour profiles just right.
From the beginning, Nonesuch set out to be the opposite of the big producers. Rather than chasing volume, they focused on quality and individuality. Small batches allow every step of the process to be carefully managed, ensuring that the whisky and gin produced here are rich in character and impossible to mistake for anyone else’s. It is a craft built on patience, attention to detail, and genuine love for distilling.
Whisky sits at the heart of Nonesuch, but the distillery has no rules about how it should be enjoyed. Whether you like it neat, with a splash of water, or in a cocktail, the philosophy is simple: your whisky, your rules. It is about the experience, not the prescription.
The distillery’s story began with gin, gaining a reputation for distinctly Tasmanian expressions using local botanicals. In 2017, when Chris joined his parents Rex and Annette, the family vision expanded to whisky. That leap of passion and persistence led to today’s celebrated range of single malts and single grain whiskies, all proudly crafted in Tasmania. At the heart of it all is Rex, whose chance meeting with Bill Lark in 2014 transformed an idea into the thriving Nonesuch Distillery we know today.
