Spring Bay Distillery

Spring Bay Distillery was founded in 2015 by Cam and Suzy Brett, who turned their long-held dream into reality on Tasmania’s pristine east coast. With a shared passion for whisky spanning more than two decades, their vision was to create premium spirits that truly reflect the unique environment of Spring Bay.

Every element of production is guided by uncompromising quality. From the use of locally grown Tasmanian barley and carefully managed wash, through to distillation in a traditional copper pot still and hand-selected casks, each step is designed to bring out depth and character. The defining ingredient, however, is water. Collected as pure rainfall less than 500 metres from the sea, it is softened by coastal mists before being filtered into the distillery. This blend of sweetness and subtle salt influence imparts a signature style that makes Spring Bay spirits stand apart.
Alongside award-winning Single Malt Whisky, the distillery also crafts a range of gins, vodka, and small-batch brandy. Visitors can experience guided tastings and behind-the-scenes tours, either at the Cambridge site near Hobart Airport or at the original east coast location. Spring Bay Distillery captures the essence of Tasmania’s coast in every bottle, offering spirits softened by the sea.
